Evie does a similar thing as well Jen. She does not have diabetes, however due to having a partial gastrectomy she has a very small stomach, akin to someone who's had gastric bypass surgery. As a result, she must eat frequent small meals and not too much junk as she needs all the nutrients possible. Usually she abides by her diet, however sometimes she will binge on favourite foods and treats and make herself ill, though she definitely knows better.

In Evie's case, I don't think she enjoys being ill. Personally, I feel she uses the food to comfort herself, and the pleasure she derives from eating it outweighs any ill effects later. I have noticed a pattern in her, when she is very stressed or upset is when she does this binging on treats. It seems to be a coping mechanism, similar to how others might cope by having a couple of drinks. Your husband has been under extra stress lately with the death in the family, and this may be a way he is coping with it, comforting himself by eating foods he enjoys. In any event, just a thought. I do hope he smartens up soon, as diabetes is nothing to fool with!
