| | Notices | Welcome to PTSD Forum. Post Traumatic Stress Disorder (PTSD) is a life threatening, debilitating disorder that can break down a sufferer’s body through anxiety and stress. Further it poses a significant suicide risk resulting from the brains neurological imbalance and chemical depression. Sufferers often live in denial, thus this community is aimed at helping PTSD sufferers help themselves through others experiences, guidance and education. We are here for the sufferer, spouse and families surrounding PTSD. Spouses and family are too often forgotten in this equation, and often they receive all the worst that PTSD has to offer. If you're involved in any way with PTSD, get registered and help yourself now. Non-active members will eventually be deleted. If you are not a sufferer, carer or someone within the mental health industry, and active, then there is little reason for you to be a member of this forum. Non-active members with zero posts are deleted periodically during the year. |

2 cups white (or brown) sugar
4 ounces butter, NOT margarine (1/2 stick)
2/3 cup milk
1 cup flake coconut
1 cup semisweet chocolate chips
1 cup peanut butter (or almond or cashew)
3 cups quick cook oats
1 teaspoon vanilla (or almond or liqueur) extract
Waxed paper
Mix sugar, milk and butter in 2 quart pan on low heat and break up butter until it melts. Get the coconut, the chocolate chips, peanut butter and oats all ready in their separate measuring cups or bowls ready. Turn up the stove to medium (not too hot or it will burn the milk) to get the sugar-milk-butter mixture to a rolling boil and stir constantly. Time that roiling boil for *exactly 60 seconds*. Remember to stir constantly to keep the milk from burning. the At the 60 second mark, remove the pan completely from the heat, pour in the coconut, chocolate, peanut butter and oats, and Stir! Stir! Stir! Add the teaspoon of extract and keep stirring. When it is all mixed, drop by spoonfuls on waxed paper and let the cookies sit for about 2 hours to setup (harden) before checking on them. They will appear like pasture pies, but they will taste heavenly. Husbands may perform quality control at this time. Makes between 25-30 cookies. Total Comments
