2quilt's peach raspberry cobbler

1 pint raspberries
2 teasp lemon juice
1/4 cup white sugar
1 1/2 cup all-purpose flour
1 1/2 teasp baking powder
3/4 teasp salt
5 Tablesp butter, soft
2/3 cup milk
Peel and slice the peaches. Eat the skins; they are good for you. Set oven to 400 degrees F. In a 2 quart baking pan, mix fruit with lemon juice and sugar. Cover with aluminum foil and bake for 30 minutes.
While it baking, make the biscuit topping. In a bowl, mix the flour, baking powder and salt. Add the butter to the flour mixture, and using two knives, cut in the butter until the butter pieces look course and are very small.
When the fruit has been cooking 30 minutes, take out the baking pan. Set it aside.
Go back to the flour mixture. Slowly add the milk, stirring it into the flour and butter mixture until it holds together and the dry flour is all wet. Now use a big spoon to scrape out spoonfuls of the biscuit topping and plop it on top of the fruit. Plop evenly so that all the frui is covered.
Bake at 400 degrees -Uncovered now-, for another 25 minutes, or until the biscuit topping is nicely browned and the fruit is bubbling around it.
