Evie's Tuna Casserole
This is Evie's recipe, one of her favourite comfort foods. It is simple to prepare, and wonderful for cheese lovers as it is very cheesy.
2 cups uncooked elbow macaroni
1 tin condensed cream of mushroom soup
2 tins chunk tuna packed in water, drained
3 cups shredded old cheddar cheese
1 spanish onion
3 gloves garlic
1/4 cup milk
1 tablespoon basil flakes
1 teaspoon butter or margarine
fresh ground pepper to taste
Cook, drain and rinse macaroni. Finely chop onion and garlic and sautee in butter until tender. Mix together soup, tuna, cheese (reserve 1/2 cup of cheese for topping), milk, basil and pepper. Fold in macaroni, onions and garlic. Place mixture in a casserole dish. Add reserved cheese as topping. Bake at 350 degrees until the cheese melts, about 15 minutes.

| | It is really good if you love cheese. It's much like homemade macaroni and cheese with tuna and extra spices. The garlic and basil really make a difference too! Actually this recipe was originally from my Foods class in secondary school, but I've altered it over the years... added way more cheese (before there was only cheese on top), added more tuna, and added the basil, onions and garlic. Ditched the peas... blech haha. |

| | I think my problem for what to make for dinner tonight is solved - I'm making this. My husband got tired of tuna casserole awhile back, but I think he'll like it with the cheese. But I'm adding the peas back in, cause I like them, haha. It sounds like we're all cheese lovers:) Have fun with the chicken pepper dish tonight! |

| | Oh, I've kept forgetting to say here that I made this the other night and we both loved it! I didn't have quite enough shredded cheddar that your recipe called for, Evie, but it was still really good. I added some frozen peas and corn, then at the last 15 minutes, some bread crumbs on top. |

| | No it is not an elbow of a seal or any other marine creature! :wink: It is called elbow for its shape, the pieces are bent and look like little elbows I suppose.
