Cauliflower Cheese Soup

1/4 cup onions, chopped
1/2 tsp salt
1/4 tsp pepper
2 cups chicken stock
1 medium head cauliflower, broken into small pieces

In a large pot, saute onions in butter. Add salt and pepper, chicken stock and cauliflower. Cook until cauliflower is tender. Mash mixture to desired texture. Oh! You already tried it Hodge? Yes, it is a favourite of our family's, and quite easy to prepare.

Well, with a variation in procedure - I learned to make a roux with the flour and butter first (which took me awhile to get the hang of:)), then add everything else. I also like to add broccoli and carrots.
