Cauliflower Cheese Soup
1/4 cup butter or margarine
1/4 cup onions, chopped
1/2 tsp salt
1/4 tsp pepper
2 cups chicken stock
1 medium head cauliflower, broken into small pieces
2 cups milk
1 cup grated cheese
1/4 cup flour
soy sauce to taste
In a large pot, saute onions in butter. Add salt and pepper, chicken stock and cauliflower. Cook until cauliflower is tender. Mash mixture to desired texture. Add milk, grated cheese and soy sauce to taste. In a separate bowl mix flour with water until pasty. Bring soup to a soft boil and pour flour mixture into soup slowly whilst stirring.

| | Well, with a variation in procedure - I learned to make a roux with the flour and butter first (which took me awhile to get the hang of:)), then add everything else. I also like to add broccoli and carrots. |
