Newfoundland Flipper Pie

This is a dish native to Newfoundland only as far as I know. It is typically eaten at Easter.

2 seal flippers
1 small turnip, cubed
3 carrots , sliced
2 onions, sliced
1 parsnip, sliced
2 ½ cups water
1 ½ oz screech (Newfoundland hard liquor)
½ fat back pork
2 tbsp vinegar

1 ½ cups flour
2 tsp baking powder
small pat of butter

This is delicious and easy, and when made correctly much better than restaurant wings!

Chicken:


3 lbs chicken wings and drummettes
1 beaten egg
1 cup flour
1 cup butter or margarine

Sauce:

3 tbsp soy sauce
3 tbsp water
1 cup white sugar
1/2 cup vinegar
1/2 tsp salt

Preheat oven to 350 degrees. Dip wings and drummettes in slightly beaten egg and then in flour....

Stuffed Marrow Squash

A traditional Irish dish.

1 large marrow squash
8 oz cooked ground lamb (ground turkey or chicken may be substituted)
1 cup mutton, beef or chicken stock
1 spanish onion, finely chopped
1 carrot, chopped in small cubes
3 large tomatoes
1/2 tsp. chopped mixed garden herbs (including oregano)
2 cups cooked rice
1/2 cup grated cheese

This is Evie's recipe, one of her favourite comfort foods. It is simple to prepare, and wonderful for cheese lovers as it is very cheesy.

1 tin condensed cream of mushroom soup

On the island of Newfoundland, Moose is a popular lean alernative to beef. Our family does not eat any beef, for red meat we eat mostly moose, also caribou and reindeer, all of which we hunt ourselves. Moose are plentiful in Newfoundland, in fact Newfoundland has the highest population density of moose in the world.

4 lb moose roast (a lean beef roast may be substituted, however it is not as good!)
